It turns out I spoke to soon. That bagel craving that I thought would go away? Yeah, it is still here, full blast. I’m trying to battle it with an Individual Whole Wheat Puff Pancake recipe that I’ve been meaning to try. I think it’s working!! I couldn’t decide if I wanted chocolate chips or frozen fruit, so I used both!
I split this little beauty into 3 servings. 1 serving is 185 calories and 20 carbs. I can handle 20 carbs. What I can not handle is a bagel. I just know if I go buy one, there will be no going back. I’ll be off the wagon. Just like a drug addict. Except with sugarrrrrrrrr. I’m a little sleepy so this post is getting weird. Time to end it before I scare away all my readers!
- 3 eggs
- 1/2 cup whole wheat flour (I didn’t have whole wheat pastry flour, and I’m pretty sure I’ve never actually seen this in a store…)
- 1/2 cup unsweetened almond milk
- 1 tsp vanilla extract
- 1/2 tsp vanilla liquid stevia
- 1/2 cup frozen berries
- 1 tbsp chocolate chips
Mix all ingredients (except toppings) together. It will be very thin like pancake batter. Poor into one large or 3 small ramekins. Add toppings. Bake at 400 degrees F for 30 minutes. It’s done if the middle has lost it’s jiggle (exactly what I’m trying to do with my body! sorry, couldn’t resist this one! it was too easy!)
