One word describes it: fail. I was so incredibly bummed. Okay maybe I’m being just a bit hard on myself… These cookies looked so good on Delighted Momma’s site, and I really trust this blogger with her recipes. I’d to explain in more detail how they were a fail. These cookies had an awesome taste, but they were just so, so dry. They crumbled when I tried to roll them into balls and made my mouth dry when I was snacking. I added a teaspoon of peanut butter to my second one and it was definitely better. I didn’t want to eat more then 2 because I was trying to keep my carbs on the low side today, but maybe I’ll dunk one in some almond milk tomorrow and see how that goes??
This recipe was semi-problematic:
- I’ve never bought coconut flour before but this stuff is so awesome. It smells so great and is so high in fiber — I was very pleased when I looked at the nutrition on the back. I was happy until I checked out at Whole Foods and found out it was almost $8 for a small bag!!
- I finally found unsweetened shredded coconut — had to look at 3 stores!! Come on people, stop sweetening everything!
- I used Hershey’s Special Dark chocolate chips (which are by far my favorite baking chips), because I already had them in the house. It might taste better with Milk Chocolate, but we are avoiding any kind of chocolate but dark these days!
- I decreased the baking time from 12+ minutes to 10 minutes, and the second batch did not turn out as dark as the first
The recipe made 29 cookies, each containing 59 calories, 6 g carbs.
If anyone has another Paleo // low carb dessert recipe let me know — I love baking and would love to try some more out! I have a very short list of desserts to make but most of the recipes on my “to do” list are actual meals or side dishes.
