Individual Whole Wheat Puff Pancake

Individual Whole Wheat Puff Pancake (from Sugar Free Mom — love her!)

  • 3 eggs
  • 1/2 cup whole wheat flour (I didn’t have whole wheat pastry flour, and I’m pretty sure I’ve never actually seen this in a store…)
  • 1/2 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp vanilla liquid stevia
  • 1/2 cup frozen berries
  • 1 tbsp special dark chocolate chips

Mix all ingredients (except toppings) together. It will be very thin like pancake batter. Poor into one large or 3 small ramekins. Add toppings. Bake at 400 degrees F for 30 minutes. It’s done if the middle has lost its jiggle (exactly what I’m trying to do with my body! sorry, couldn’t resist this one!)

3 servings // 185 calories each // 20 carbs
