Protein Pancake (adapted from this site)
- 4 eggs
- 1 scoop whey protein powder
- 1/2 cup unsweetened applesauce
- 2 tbsp butter
Melt butter in pan. Mix all other ingredients in blender. Poor 1/2 batter into pan and cook until stable, ~4 minutes, then flip and cook an additional 2 minutes. These things are pretty tasty (and definitely filling) but hard to flip!! Mine ended up looking like this:
I may or may not have added 1 tbsp lite syrup… I will admit nothing!
