Primal Italian Meatballs

from Marks Daily Apple

Ingredients

  • 1 lb ground beef
  • 1 lb italian sausage, casing removed
  • 3 cloves garlic, minced
  • 1 sprig fresh rosemary, minced
  • 3 sprigs fresh thyme, minced
  • 1 long sprig fresh oregano, minced

My Baby Oregano — the only herb I grow at home!

  • 1/4 cup chopped flat leaf parsley
  • 1/2 medium yellow onion, chopped
  • 1/2 cup almond meal
  • 1/2 tsp ground red pepper
  • 1/4 tsp black pepper
  • 1/2 cup grated parmesan cheese
  • 1/4 cup bacon grease

Directions

  1. Mix all ingredients in a bowl, except bacon grease
  2. Roll into medium sized meatballs (my batch made 30)

I try to make them all the same size for calorie consistency…

  1. Heat bacon grease in a pan on medium-high heat
  2. Add meatballs, cook 7 minutes on each side
  3. Serve with Spaghetti Squash for a real treat!

MAKES 30 MEATBALLS // 98 calories // 0.5 g carbs (IN ONE)

This thing is by far my favorite kitchen utensil, except for maybe my Kitchen Aid Stand Mixer. I LOVE IT!! IT chops anything, is super easy to clean, and just works like magic.
